Vegetarian?


I have gotten so far behind in posting to this blog that I have reconsidered my posting habits. I am going to try to post shorter, more frequent thoughts. We will see how this works. After all nothing is permanent in this world.
I had my first Dr’s appointment hear in Tucson last month. My doctor recommended that I change my diet and become a vegetarian. My first thoughts were that she was way out of the mainstream of medical practitioners. After giving it some thought though, I decided that since we were going on a cruise and the cruise lines usually offer several vegetarian alternatives, (including at least one entrĂ©e with every meal) I would try it out on the cruise and see how it worked. There is something appealing to me about the binaryness of it. Unlike traditional diets which are are very slippery, with this, you ate meat or you did not. Anyway, I was amazed with the food on the cruise. All of the vegetarian choices I tried were delicious. I did not miss meat at all. I had non meat appetizers, soups, salads, and entrees. Now, I did not go all the way to vegan, that would be a bit more difficult since many of my choices contained cheese. This does not mean that I ate no meat at all. I am by no means a true vegetarian at this point. I even tried some of my brother Steve’s escargot. It was cooked beautifully, the perfect point between raw and rubber.
After the cruise we went to Disneyworld. There skipping meat was a little more difficult especially lunches as we were eating in fast food places. When we got home I bought some vegetarian entrees and some Boca patties. What I was doing was still not really planning what I was eating just putting Boca into the hole in the plate that meat used to occupy. Rich is not planning on converting although he did say he might eat one meal a month or a week depending on how the whole process goes. Now, the plan is for me to be cooking my own meals while Rich cooks his. (I have been so spoiled.) We were planning for me to begin cooking at least part time sometime in May so that plan has changed a little. I bought a Vegetarian Cooking for Dummies so I am starting to learn a bit more about what I should/could eat to stay healthy and I am looking for vegetarian recipes.
